Grits Roll Filled with Tomato Sauce, Shrimp & Mushrooms
Serves 6
The affinity of shrimp for grits is enhanced with this puffy flat cheese soufflé to which familiar pizza ingredients and shrimp have been added. It may be made ahead and reheated just before serving. It makes the presentation splash of a soufflé, without the tension.
For the grits roll
1/4 cup grits
1 cup milk
2/3 cup grated cheddar cheese, or 1/3 cup grated Swiss cheese and 1/3 cup Parmesan cheese
4 egg yolks, lightly beaten
Salt
Freshly ground black pepper
6 egg whites
